Talking Turkey

Try one or all of these delicious meals for a new take on fall's most famous fowl.

Turkey Meatballs 

Prep: Preheat oven to 400°F. Oil a large foil-lined baking sheet.

In a large bowl, combine:
2 lbs ground turkey
1 cup bread crumbs
1/2 cup grated Parmesan
1/2 cup ketchup
2 onions (finely chopped)
2 cloves garlic (minced)
1/4 cup fresh parsley (minced)
2 eggs (lightly beaten)
1/2 tsp salt
2 tsp dried oregano

Form 40 1" meatballs and bake for 20 minutes on the baking sheet. Refrigerate remaining mixture.

Meal #1: Meatballs & spaghetti
In a medium pot, thoroughly heat half of the meatballs with one large jar of pasta sauce. Serve over cooked spaghetti with a side salad.

Meal #2: Meatball heroes
Slice remaining meatballs in half, and heat in a pot with 1 jar of marinara sauce. Fill 4 sliced hero rolls with meatballs, top with shredded mozzarella, and broil sandwiches open-face 1 minute until cheese is melted. Serve with steamed broccoli or green beans.

Meal #3: Spicy turkey tacos
Sauté remaining turkey mixture with 1 teaspoon of taco seasoning, stirring until crumbly. Fill taco shells with turkey and top with shredded lettuce, cheese, chopped tomato, avocado, and hot sauce. Serve with a side of rice and black beans.
