1. Cheesecake Parfait
Stir together ½ cup whipped cream cheese, 3 oz plain Greek yogurt, and 1 Tbsp powdered sugar. Crumble a graham cracker. In a glass, layer cream-cheese mixture, crumbs, and raspberries.
2. Pomegranate Sunrise
Wet the rim of a glass and dip it in sugar. Pour in ½ cup seltzer and add ¼ cup orange juice. Just before serving, pour in 2 Tbsp pomegranate juice. (Don’t stir!) Top with a slice of orange.
3. Avocado BLT
Toast two slices of bread. Cook two pieces of bacon in the microwave. Allow to cool slightly and break each piece in half. Top each slice of toast with a lettuce leaf, tomato, avocado, and bacon. Serve.
4. Berry Waffle
Combine ½ cup thawed frozen mixed berries, 2 tsp sugar, and 1 tsp orange juice in a bowl. Let sit 15 minutes. Prepare a ready-to-heat Belgian waffle according to directions. Top with berry mix just before serving.
